Le olive dopo aver sostato nelle aree predisposte del frantoio per un periodo non superiore alle 24h vengono lavorate; la prima operazione che subiscono รจ la mondatura che consiste nella separazione delle olive da tutti i corpi estranei come foglie e rametti (defugliatura) e pietre (spietratore)
