Dopo l’estrazione, la sansa subisce un ulteriore processo di separazione, volto a distinguere la parte solida del nocciolino dalla polpa residua. Attraverso un’apposita macchina, la sansa viene sottoposta a un’azione meccanica che, per forza centrifuga, sfrutta la differenza di consistenza e densità tra i suoi componenti. Il nocciolino, più compatto e duro, viene accuratamente separato dalla parte polposa, dando origine a due materiali distinti.
