La funzione dei banchi gramole è quella di rimescolare delicatamente la pasta, di rompere le cellule oleifere con conseguente liberazione dell'olio e di rompere le eventuali emulsioni di olio in acqua o viceversa acqua in olio. Ogni vasca è provvista di intercapedine per la circolazione dell'acqua ad una temperatura che non supera i 24C°.
