Le olive appena raccolte vengono sottoposte a un meticoloso processo di lavaggio all’interno della macchina lava olive. Un getto di aria prima e acqua poi, liberano le drupe da ogni impurità residua. Segue quindi l’asciugatura per scolatura, tramite setaccio vibrante. Non manca il vigile controllo degli addetti alla frangitura, che coadiuvano il lavoro meccanico garantendo la massima attenzione a ogni passaggio.
