In Puglia l’oliva coratina viene raccolta in genere fra novembre e gennaio. In media la coratina pesa circa 4 grammi e ha forma ovoidale leggermente asimmetrica. Al momento della maturazione (invaiatura) passa da un colore tendente al giallo ad uno nero-violaceo ed è sensibile al freddo (a differenza della pianta, che invece è resistente).
