La Coratina, originaria della città di Corato, è una cultivar di olivo tipica della Puglia. L’olivo Coratina si caratterizza per avere delle dimensioni medie, rami corti, ma che durante la coltivazione possono svilupparsi in altezza. Una caratteristica che rende questa cultivar molto apprezzata è la sua capacità di adattarsi a numerose tipologie di terreno, anche a quelli più sassosi e calcarei. Inoltre sviluppa radici molto facilmente. I frutti della Coratina si distinguono per il loro tipico colore nero-violaceo durante il periodo della maturazione, che avviene più tardi rispetto ad altre varietà.
